Hello kittens!!!
It's been a crazy, wacky, fun-filled, work-jammed couple of weeks for us here at Gripe du Jour, but we haven't forgotten you five people that sometimes read this site!! And as thanks for your occasionally checking this site and for all of your recipe suggestions, we give you the recipe for the salad that we ended up taking to that potluck so many moons ago. Note to one Mister Ohn Oleman: everybody else likes bacon, buddy, when are ya going to get with the freakin' program??!?!
Watermelon, Tomato, and Feta Salad:
(thank you, Gourmet cookbook, for writing this fabulous recipe!)
1 3-pound piece watermelon, rind removed, fruit cut into 3/4" chunks and seeded
2 large tomatoes, cut inton 3/4" chunks (**we used a generous pound of halved heirloom cherry tomatoes and it was so FREAKIN' GOOD.)
1 cup crumbled feta
2/3 c packed fresh cilantro sprigs, chopped
2 Tbs extra-virgin olive oil
1 Tbs white basalmic vinegar
Salt and freshly ground pepper, to taste.
Stir together watermelon, tomatoes, feta, cilantro, oil, and vinegar in a large bowl. Season with salt and pepper to taste.

While I don't think it ever would have occured to me to put watermelon and feta in the same salad, that sounds fantastic.
